Today I’m going to show you how to make homemade gluten free Green Tea Granola in a few easy steps. Matcha powder is one of my favorite flavors and it’s so versatile, that I’ve been experimenting with different ways to use it. You will definitely be seeing a few Green Tea recipes on this blog. I love making my own granola mainly because you can select the ingredients that go in it, such as gluten free oats and natural oils. If you look at the ingredients in a lot of the granola we buy, there are a lot of hidden oils and sugars. It’s also pretty cost-effective to make your own, as you can make large batches and it stores well.
– 2 cups rolled oats (Bob’s Red Mill Guten Free)
– 1 cup of chopped raw almonds
– 1 cup unsulfured dried apricots
– 1/2 cup goji berries
– 2 Tbs powdered matcha, plus more for finishing
– 4 tbs coconut oil
– 3 tbs raw honey
– A pinch of Himalayan Sea Salt
Preheat the oven to 120C/250F. Line the baking sheet with parchment.
Meanwhile, chop your dried fruit and nuts.
Spread the rolled oats over a lined baking sheet and bake for 30 minutes, stirring once or twice along the way. Remove from the oven. Leave the oven on.
Melt the honey and coconut oil in a pot on low until it becomes a smooth liquid. Turn stove off.
Add your oils and Sea Salt in to the oats container and mix the oats with the matcha powder until evenly coated.
Return to the over and cook mixture for another 20 minutes until dry but not browned, stirring once or twice along the way.
Remove from oven and add your chopped fruits and nuts and extra matcha powder to your liking, stir well.
Let cool and store or serve. When served with milk ( I use almond or rice) , it gives it a green hue and delicious flavor. It’s also a colorful and different topping to a acai and smoothie bowls.
